Campfire Potatoes​
(This recipe serves two)

Ingredients:
-1 lb. lil potatoes, cut into chunks
-half an onion, diced
-1 red paper, diced
-1 Tbsp olive oil
-2 Tbsp mayo
-1 tsp paprika
-1 tsp garlic powder
-1 tsp dill
-1 c shredded cheddar cheese

Directions:
-Par boil the potatoes until mostly cooked through.
-Toss the potatoes in a large bowl with the onions peppers, olive oil, mayo, spices and cheese.
-Sprinkle with a generous portion of salt and pepper and mix well.
-Drizzle some olive oil into a sheet of aluminum foil.
-Pour the potato mixture onto the foil and fold into a little packet.
-Wrap the packet once more with another sheet of foil.
-Allow to cool before refrigerating.

To reheat at camp:
-Place the foil packet directly onto a grill or in a skillet on your camp stove. Heat for 10-15 minutes, flipping occasionally, until the contents are hot and steaming.
-Open your packet carefully! Steam from the packet can be really hot.
-Eat directly from the foil packet like a heathen or get fancy and portion it onto paper plates.
-Pairs well with ketchup, plain yogurt or hot sauce.
-Leftovers are great for breakfast.
