Cheesy Chicken & Broccoli​

(This recipe serves two)

Ingredients:

-2 Tbsp Olive oil

-2 chicken breasts, cut into pieces

-1 Tbsp butter

-half an onion, diced

-8 oz, mushrooms, sliced

-2 tsp minced garlic

-4 oz. cream cheese

-1 broccoli crown, cut into pieces

-Salt and pepper

-2 tsp paprika

- 2 tsp Italian seasoning

-1 c shredded cheddar cheese

Directions:

-Heat the olive oil in a skillet over medium heat.

-Brown the chicken on all sides until cooked through.

-Remove chicken to a plate and set aside. 

-Add a drizzle of oil to the pan, lower heat to medium low,  and cook the onions and mushrooms, stirring often, until translucent.

-Add the garlic and cook for one more minute.

-Meanwhile, steam the broccoli until softened.

-Add the cream cheese to the onions and mushrooms and stir to coat. 

-Add salt and pepper to taste along with other spices and mix well. 

-Drain the broccoli, salt to taste, and add to the pan.

-Add chicken and shredded cheese to the pan and mix everything together. 

-Portion into a take out container and allow to cool before refrigerating.

To reheat at camp:

-This meal can be frozen in a take out container and thawed in the cooler.

-Place into a pot and heat over medium heat, stirring often.

-Can serve over rice or with grilled bread.
