Knock Off Ramen
(This recipe serves two)
Ingredients:
-2 Tbsp olive oil
-1 block of firm tofu
-2 packs of chicken ramen
-half an onion, diced
-1 red pepper, diced
-1 heaping Tbsp peanut butter
-Sriracha to taste
Directions:
-Heat the olive oil in a large skillet over medium heat.
-Press the tofu to remove excess water and cut into cubes.
-Toss the tofu in the chicken flavor packets from the ramen.
-Brown the tofu in the skillet, cooking to your desired crispiness, then set aside on a plate.
-Add a little oil to the pan and cook the diced onions and peppers until soft.
-Meanwhile, cook the ramen in a pot following package directions.
-Drain most of the water, leaving a small amount on the noodles.
-Add peanut butter and sriracha to the veggies and toss to coat.
-Scrape the veggies into the ramen pot and stir until well mixed.
-Add salt and pepper to taste.
-Top with the tofu and serve.
To reheat at camp:
-Because this meal creates a fair amount of dirty dishes, you may elect to make it the night before and bring it with you.
-It can be eaten cold or heated in a skillet.
